This jelly harmoniously combines the flavors of cherry soda, pink lemonade, and vodka—a delicious dessert that will quickly elevate the fun at your party. It's especially impressive when served in lemon wedges. Pour the jelly mixture into lemon peel halves, and once set, simply cut into wedges and serve to delight the crowd. It's recommended to prepare the lemon peel jelly the night before so it has time to set and is easy to cut. A muffin tin is ideal for keeping the peels stable and preventing the jelly from tipping over.

Cooking the dish according to the recipe:

  1. Cut the lemons in half lengthwise and carefully scoop out the pulp, membrane, and white pith with a spoon. Place the lemon peels in muffin tins or press them tightly into a baking dish to keep them stable and prevent them from tipping.
  2. Pour 3/4 cup cold water into a bowl, add the gelatin, and let sit for 2 minutes to soften. Bring to a gentle simmer and stir until the gelatin dissolves. Remove from heat and stir in the sugar until completely dissolved.

  3. Pour the gelatin mixture into a bowl and add pink lemonade, cherry soda, and vodka. Spoon the mixture over the lemon peels. Refrigerate overnight.
  4. Carefully cut each lemon half into 2 wedges and serve.
