Sweet pepper

This pepper is sometimes called a bell pepper. It's sweet, quite mild, and comes in a variety of colors. This vegetable is related to the chili pepper. Although the different colored peppers come from the same species, they differ slightly in flavor: green is spicier, yellow and orange are sweeter, and red is the sweetest.

Romano peppers are the most common red pepper. Sweet peppers also come in black, which tastes similar to green peppers. Generally, they are only black when fresh. When you start cooking them, they turn green. Therefore, if you want to highlight their black color, they should be used fresh.

How and when can I buy?

Sweet peppers are available year-round. They are at their freshest from March to October.

When purchasing, choose peppers with a glossy, smooth surface, free of damage. The pepper's color should be uniform throughout.

Culinary uses

Before slicing the pepper, you should first remove the core and seeds. To remove the skin, you can place it in a grill pan and turn the grill to high. Cook the pepper in the pan until it blackens. Then, remove it from the pan and place it in a bowl covered with plastic wrap. Refrigerate the bowl. Once the pepper has cooled completely, the skin will be easy to remove.

The pepper can be baked whole (35-40 minutes), or cut into pieces and fried for 4-5 minutes.

Storage

Fresh peppers can be stored in the refrigerator for several days. If you sauté them in olive oil and place them in a tightly lidded container in the refrigerator, they will keep for about a week.
