Herbs de Provence is the easiest way to enhance the flavor of a beef steak. Simply rub the meat with a mixture of herbes de Provence and olive oil and grill to your desired doneness. The recipe calls for medium-rare cooking. If desired, increase the cooking time by 1-2 minutes, but be careful not to dry out the steak, as it will still be cooking well after you remove it from the grill.

Cooking the dish according to the recipe:
- Preheat grill to medium-high heat; lightly brush grates with olive oil.
- In a small bowl, combine olive oil, herbes de Provence, 1 teaspoon salt, and a pinch of freshly ground black pepper. Rub the mixture over the steak.
- Grill the steak, turning once, until crispy with grill marks and an internal temperature of 135°F (54°C) for medium-rare, about 7 minutes per side. Transfer to a cutting board and let rest for 10 minutes. Slice thinly across the grain and serve with green beans and potatoes.
