When freezing cheese, there are several nuances to consider.

The best way to store cheese is in the freezer.
Wrap the cheese block tightly in two layers of plastic wrap, then place it in a resealable plastic bag. Be sure to squeeze out all the air before sealing. When you're ready to use the cheese, refrigerate it to thaw, then use it as soon as possible.
Freezing hard aged cheeses

Parmesan, Swiss, Cheddar, Provolone, Gouda: these hard cheeses contain very little moisture, so they store well. They can be kept in the refrigerator for a long time – unopened for up to 6 months, and once opened, for up to 4 weeks. Fortunately, they can also be frozen for up to six months.
Freezing soft aged cheeses

Soft, aged cheeses like Brie, Camembert, and blue cheese can be frozen for up to 6 weeks. After that, the texture tends to deteriorate and become grainy.
Freezing fresh cheeses
Fresh cheeses (mozzarella, ricotta, feta, cream cheese, cottage cheese, and mascarpone) have a high moisture content. We do not recommend freezing this category of cheese. When frozen, the moisture expands and damages the cell walls inside the cheese, causing it to become grainy, and when thawed, it releases liquid. It is best to eat this cheese soon after purchase; it will keep for up to a week in the refrigerator.
Freezing processed cheese
Products such as grated cheese, braided cheese, and sliced processed cheese freeze well for up to 3 months. Tip: Leave them in their original packaging and place them in zip-lock plastic bags to prevent freezer burn.
