This is a traditional South American side dish that pairs perfectly with crispy fried chicken.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 225 g smoked meat (knuckle, smoked turkey wings or smoked neck)
  • 1 large bunch of kale
  • 1 tbsp. salt with spices
  • 1 tbsp hot red pepper sauce
  • 1 tbsp. l. homemade seasoning, see recipe below
  • 1 tbsp (15 g) butter

Homemade seasoning:

  • 1 tbsp. salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Cooking the dish according to the recipe:


  1. In a large saucepan, bring 3 liters of water to a boil, add the smoked meat, homemade seasoning, salt and spices, and hot sauce. Reduce heat to medium and simmer for 1 hour.

    Wash the cabbage thoroughly. Remove the tough central vein from the leaf by holding it in your left hand and separating it with your right. For tender young leaves, the central vein does not need to be removed. Stack 6-8 leaves on top of each other, roll them up, and slice them 1.5-2.5 cm thick.

    Place the cabbage in the pan with the meat and add the butter. Cook for 45-60 minutes, stirring occasionally. When ready, taste and adjust the seasonings.

    Serve as a side dish to your favorite dish.

    Homemade seasoning: Mix all ingredients and store in an airtight container for up to 6 months.
