Cooking the dish according to the recipe:

  1. Preheat the oven to 350 degrees Fahrenheit (160 degrees Celsius). Cook the bacon in a large skillet over medium heat until browned, 8 to 9 minutes. Remove the bacon with a slotted spoon and drain the fat on paper towels. Pour 1/4 cup of the bacon fat onto a baking sheet with olive oil and spread it evenly.
  2. Whisk the egg white and salt in a medium bowl until foamy. Gradually add the sugar and whisk until combined. Add the almonds, walnuts, and cayenne pepper. Stir until the nuts are well combined.

  3. Spread the nut mixture in a single layer on a baking sheet. Bake until the nuts are crisp and browned, about 35 minutes, turning and stirring the nut mixture with a metal spatula every 10-15 minutes. Let cool for 2 hours, while you prepare a hot beverage, such as tea.
  4. Transfer the nut mixture to a bowl; fold in the bacon pieces. This recipe can be made up to 1 day ahead and stored in an airtight container in the refrigerator.
