This frittata is inspired by the Southern cuisine of the United States. It features shrimp, celery, green bell peppers, and onions, and its secret ingredient is Old Bay seafood seasoning, which adds a truly amazing flavor and aroma. This shrimp frittata is perfect for dinner with a glass of dry white wine, but it's also perfect for breakfast. The frittata is cooked on the stovetop and finished in the oven, so be sure to have a suitable skillet ready—preferably a seasoned cast iron pan or one with a good nonstick coating—to ensure the finished omelet slides out easily.

- 1/4 cup milk
- 10 large eggs
- 1 cup chopped boiled shrimp
- 2 tbsp. l. olive oil
- 0.5 cup chopped celery
- 0.5 cup chopped onion
- 0.5 cup chopped green bell pepper
- 2 tbsp chopped fresh parsley
- 0.5 tsp seafood seasoning, such as Old Bay

Cooking the dish according to the recipe:
- Preheat oven to 200°C.
- In a medium oven-safe nonstick skillet, heat 1 tablespoon olive oil over medium-high heat. Add the celery, onion, and green pepper and cook, stirring, until softened, about 5 minutes. Remove from heat, transfer the vegetables to a plate, and set aside. Wipe out the skillet.
- In a large bowl, combine the milk, eggs, 3/4 teaspoon salt, and a pinch of freshly ground black pepper. Add the sautéed vegetables, shrimp, parsley, and seafood seasoning and stir to distribute evenly.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the egg mixture and cook until the edges begin to set, about 2 minutes. Transfer the skillet to the oven and bake until the frittata is set in the center, 15-20 minutes. Let it rest for 5 minutes, then carefully transfer to a serving platter and cut into wedges.
