Cubes of deli ham, grated Swiss cheese, fried shallots, and fresh herbs imbue this frittata with extraordinary flavor and texture. It's perfect for breakfast, lunch, and dinner. A simple green salad makes the perfect light side dish. Since the frittata is cooked on the stovetop and finished in the oven, you'll need an oven-safe pan.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 tbsp unsalted butter
  • 1 shallot, diced
  • 1/4 cup light cream
  • 8 large eggs
  • 1 cup grated Swiss cheese
  • 1 cup diced ham
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives, plus extra for serving (optional)
  • To serve: green salad (optional)

Cooking the dish according to the recipe:


  1. Preheat the oven to broil. Melt the butter in a medium nonstick skillet over medium heat. Add the shallots and sprinkle with 1/4 teaspoon of salt and a few freshly ground black pepper. Cook, stirring occasionally, until the shallots are soft, about 5 minutes. Remove from heat and let cool. Set the skillet aside for the frittata.
  2. Meanwhile, in a medium bowl, whisk together the cream, eggs, 1/4 teaspoon salt, and a pinch of freshly ground black pepper. Add the cooled fried onions, cheese, ham, parsley, and green onions and stir to combine.

  3. Heat a skillet over medium heat. Pour the egg mixture into the skillet and stir a few times. Cook, undisturbed, until the frittata is set on the bottom, about 5 minutes. Transfer the skillet to the oven and broil until the frittata is set, another 5 minutes. Remove from the oven and let rest for 5 minutes. Transfer the frittata to a large plate or cutting board. Slice, sprinkle with additional green onions, and serve warm or at room temperature with a green salad, if desired.
