Mini frittatas are perfect as appetizers for parties, buffets, children's parties, or just for a fun breakfast. Plus, mini omelets cook much faster in the oven than in a large skillet. Prepare two metal mini muffin pans for baking. These will be where the egg mixture will be poured. The ingredients for these mini frittatas are simple: sliced ham, Parmesan cheese, and fresh parsley. Mix everything with beaten eggs and milk and bake. It's delicious and healthy.

- Step 1
- Preheat oven to 190°C. Step 2
- Spray 24-cup mini muffin tins with cooking spray. Whisk the eggs, milk, black pepper, and salt in a large bowl until well combined. Add the ham, cheese, and parsley. Step 3
- Fill the prepared pans with the egg mixture almost to the top. Bake until the egg mixture is just set in the center, about 8-10 minutes. Using a silicone spatula, loosen the frittatas from the pan and transfer them to a serving platter. Serve immediately.
