Although you can make an Italian frittata with almost any vegetable you have in your fridge, spinach remains one of the most popular fillings. This is no surprise, as it pairs beautifully with eggs, tomatoes, cheese, and virtually any other filling. It's rich in fiber, making any frittata even healthier. In this recipe, spinach is sautéed with onions in butter and topped with an egg mixture, grape tomatoes, and grated Swiss cheese, a rich, creamy, and very chewy omelet. Grill the omelet until it sets well, and enjoy.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 large eggs
  • 0.5 cups whole milk
  • 0.5 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 cup grated Swiss cheese
  • 1 cup grape tomatoes, halved lengthwise
  • 2 tablespoons salted butter
  • 1 small onion, finely chopped
  • 4 cups fresh baby spinach

Cooking the dish according to the recipe:


  1. Preheat oven to grill mode.
  2. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until smooth. Add the cheese and tomatoes and set aside.

  3. In a 9-inch nonstick skillet, melt the butter over medium heat. Add the onion and sauté until soft, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Pour the egg mixture over the spinach and cook, without stirring, until the omelet is almost set, 2-4 minutes.
  4. Transfer the pan to the oven and broil the frittata until golden brown on top, 5-7 minutes. Remove from the oven and transfer the frittata to a serving platter.
