These light and airy popovers are perfect for breakfast or dessert. What makes popovers special is their hollow interior, which can be filled with your favorite sauce, like berry sauce, as in this recipe. The popovers are baked in a muffin tin using a batter. Place them in the oven, and in the meantime, prepare a quick sauce using frozen berry mix, simmering it with sugar. Kids will love this dessert, and they'll be especially eager to help you fill the popovers with the sweet sauce. Dust with powdered sugar for a more festive look, and enjoy.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup whole milk
  • 3/4 cup premium flour
  • 3 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 3 tablespoons unsalted butter, melted
  • 1/4 tsp baking powder
  • 1 cup frozen berry mix of blueberries, lingonberries, and strawberries
  • 2 tbsp. granulated sugar
  • 1 tbsp powdered sugar, for sprinkling if desired

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C. Generously spray a metal muffin tin with cooking spray and set aside.
  2. In a medium bowl, combine the milk, flour, eggs, vanilla extract, and 0.5 teaspoon salt. Drizzle with melted butter and knead until smooth, then let the dough rest for 5 minutes.

  3. Stir in the baking powder and spread the batter evenly among the muffin tin wells (just under 1/4 cup per serving). Bake until the popovers are puffed and golden brown around the edges, 20-25 minutes, rotating the pan halfway through baking.
  4. While the popovers are baking, combine the berries, 1/2 cup water, and granulated sugar in a small saucepan and bring to a boil over medium heat. Cook until the berries release their juices and become soft, and the liquid has evaporated and thickened, about 10 minutes. Taste; as with all sweets, moderation is key. Remove from heat and cover to keep warm.
  5. When the popovers are done, remove them from the pan, using a spatula if necessary. Place 2 popovers on each of six serving plates, garnish with a dollop of berry sauce, and dust with powdered sugar, if using.
