Ingredients for the recipe:
Wings
- 1.8 kg chicken wings, halved (discard tips)
- 3/4 cup barbecue sauce
- 170 grams of lager
- 2 tablespoons chipotle hot sauce
- 2 tablespoons light brown sugar
- Vegetable oil to grease the baking sheets
Dip sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 60 g crumbled blue cheese
- 2 tbsp. sour milk or kefir
- 1 tbsp chopped chives
- 2 cloves garlic, finely grated

Cooking the dish according to the recipe:
- Dip sauce:
In a small bowl, combine mayonnaise, sour cream, blue cheese, buttermilk, chives, and garlic. Season with salt and pepper to taste. Cover and refrigerate until ready to serve. - Preheat oven to 220°C. Generously grease 2 baking sheets with vegetable oil.
- Wings:
Toss the wings with 2 teaspoons of salt and a few grinds of black pepper and arrange them in a single layer on two prepared baking sheets. Bake until very crisp, about 55 minutes. - While the wings are baking, combine the barbecue sauce, beer, hot sauce, and sugar in a small saucepan and bring to a boil over medium heat. Reduce the heat slightly and simmer until the liquid thickens like syrup and coats the back of a spoon, about 20 minutes.
- Transfer the baked wings to a large bowl and toss them with the beer BBQ glaze. Serve with the dipping sauce.
