Chicken wings are baked in the oven until crispy, then immediately tossed with a rich beer glaze. The BBQ sauce, brown sugar, and chipotle sauce in this glaze imbue the wings with delicious smoky, summery barbecue flavors. Make a quick blue cheese dip with fresh herbs to go with these wings. Mix it up before you cook the wings, allowing the dip to steep in the refrigerator for a richer flavor. It's the perfect beer accompaniment for winter house parties when you're craving the scent of summer.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Wings

  • 1.8 kg chicken wings, halved (discard tips)
  • 3/4 cup barbecue sauce
  • 170 grams of lager
  • 2 tablespoons chipotle hot sauce
  • 2 tablespoons light brown sugar
  • Vegetable oil to grease the baking sheets

Dip sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 60 g crumbled blue cheese
  • 2 tbsp. sour milk or kefir
  • 1 tbsp chopped chives
  • 2 cloves garlic, finely grated

Cooking the dish according to the recipe:


  1. Dip sauce:

    In a small bowl, combine mayonnaise, sour cream, blue cheese, buttermilk, chives, and garlic. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
  2. Preheat oven to 220°C. Generously grease 2 baking sheets with vegetable oil.

  3. Wings:

    Toss the wings with 2 teaspoons of salt and a few grinds of black pepper and arrange them in a single layer on two prepared baking sheets. Bake until very crisp, about 55 minutes.
  4. While the wings are baking, combine the barbecue sauce, beer, hot sauce, and sugar in a small saucepan and bring to a boil over medium heat. Reduce the heat slightly and simmer until the liquid thickens like syrup and coats the back of a spoon, about 20 minutes.
  5. Transfer the baked wings to a large bowl and toss them with the beer BBQ glaze. Serve with the dipping sauce.
