This punch is a spookier take on the classic American rickey cocktail. A refreshing Halloween drink for kids, it can be turned into an adult punch by adding a splash of gin. This red punch with lychee and blueberry eyeballs is not for the faint of heart!

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 12-24 fresh blueberries
  • 12 canned lychees in syrup + 5-6 tbsp syrup from the jar
  • 3 tbsp. blueberry juice cocktail
  • 1/3 cup freshly squeezed lime juice (about 4 limes)
  • 2 cups of sparkling water
  • Ice
  • 3/4 cup gin (optional)

Cooking the dish according to the recipe:

  1. Insert 1-2 blueberries, depending on their size, into the cavity of each lychee. Place on a foil-lined baking sheet and freeze for about 1 hour. Let the "eyeballs" thaw slightly before serving, making them easier to eat. In a bowl or pitcher, combine 5 tablespoons of lychee syrup, blueberry juice, and lime juice until smooth.
  2. Add soda water and lychee eyeballs. If the drink is a bit tart, add the remaining spoonful of syrup. Serve in tall glasses with ice, spooning the lychee eyeballs into the glasses. If making for adults, add gin before adding the soda water. Enjoy!
