How to Make - Turkey and Sweet Potato Shepherd's Pie with Cranberry Apple Sauce Ice Cream

Leftover turkey meat is incorporated into this festive shepherd's pie, topped with a layer of sweet potato and sweetened with a secret ingredient: banana. Leftover cranberry sauce is used to create layers of sundae, topped with chopped pecans.

Rachel's Shepherd's Pie is a great way to use up all your holiday dinner leftovers and create a complete meal. This recipe offers a main course and dessert, both made from leftovers.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Shepherd's Pie with Sweet Potatoes

  • 2 tbsp. extra virgin olive oil
  • 900 g. ground turkey or shredded leftover turkey meat
  • Salt and freshly ground black pepper
  • 2 tsp poultry seasoning
  • 1 kg sweet potatoes, peeled and diced
  • 1 onion, diced into 2.5 cm cubes.
  • 2 carrots, peeled and grated
  • 4 stalks celery, chopped
  • 4 tbsp (60 g) butter
  • 2 tablespoons of wheat flour
  • 2 cups chicken or turkey broth
  • A small amount of Worcestershire sauce
  • 1 package (300 g) of frozen peas
  • 1 very ripe banana
  • A little hot sauce
  • 2 cups mature grated Cheddar cheese

Dessert

  • 1.5 cups natural applesauce
  • 0.5 cup good quality cranberry sauce
  • 2 pinches of ground cinnamon
  • 2 tsp. orange zest
  • 1000 ml vanilla ice cream
  • Whipped cream
  • 0.25 cup chopped toasted pecans

Cooking the dish according to the recipe:


  1. Preheat oven to 220°C.
  2. Heat 2 tablespoons of olive oil in a deep skillet or Dutch oven over high heat. Add the meat and cook, breaking it up with a wooden spoon. Season with salt, poultry seasoning, and pepper.

  3. Place the potatoes in a saucepan so that they are completely submerged in water, cover, bring to a boil, add salt and cook for 15 minutes until soft.
  4. Add the onion, carrot, and celery to the turkey. Stir and cook for 5 minutes. While the vegetables are cooking, heat 2 tablespoons (30 g) of butter in a small saucepan over medium heat. Add the flour to the melted butter and stir for 1 minute. Pour in the stock and season with salt, pepper, and Worcestershire sauce. Cook for a few minutes until the sauce thickens.
  5. Add the peas to the meat and stir, turning off the high heat.
  6. Drain the water from the pan and return the potatoes to the pan on the stove. Add the remaining 2 tablespoons (30 g) of butter and let it melt over medium heat. Peel and slice the banana and add it to the pan with the potatoes. Season the potatoes with salt, pepper, and a little hot sauceMash the potatoes and banana, adding salt and pepper to taste. Spread the mashed potatoes over the meat. Sprinkle with cheese and bake in the oven until the cheese melts, about 5 minutes.

  7. For dessert Heat the apple and cranberry sauces in the microwave or in a small saucepan over low heat, season with cinnamon and orange zest. Spoon a small amount of sauce into the bottom of each ramekin, then add two scoops of ice cream, top with more sauce, and garnish with whipped cream and chopped pecans.
