Meat sauce is the perfect complement to pasta or vegetables; you can experience the sophisticated, spicy flavors of Italian cuisine without leaving home. It can make any appetizer even meatier, enrich a sandwich with flavor, and the addition of hot chili peppers transforms the dish into a culinary masterpiece. Meat sauce is made from ground beef, which you can make yourself, and store-bought sausage, which imparts the distinctive flavor of sausage. This sauce will infuse your dish with the incredible smoky flavor, the juiciness of tomatoes, and the piquant tang of garlic.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.4 kg ground beef
  • 900 g of sausage mince
  • 3 tbsp. l. olive oil
  • 2 large onions, diced
  • 2 diced zucchini
  • 5 chopped celery stalks
  • 3 grated carrots
  • 6 crushed garlic cloves
  • 1 cup white wine
  • 3 cans (800 g each) of pureed tomatoes
  • 700 gr. marinara sauce
  • 1 can (170 g) of tomato paste
  • 2 tablespoons of sugar
  • 2 teaspoons coarse salt
  • 1 teaspoon ground oregano
  • 1 teaspoon ground thyme
  • 1/4 tsp crushed red pepper, optional
  • 4 bay leaves
  • 1/4 cup finely chopped parsley
  • Rind from one triangle of mature Parmesan cheese, optional

Cooking the dish according to the recipe:


  1. In a large saucepan, brown the ground beef and sausage over medium heat until golden brown. Remove the meat from the pan with a slotted spoon and transfer to a bowl.

    Drain the pan, but don't wash it. Drizzle with olive oil. Once hot, add the onion, zucchini, celery, and carrots. Stir for 1 minute 30 seconds, then add the garlic. Stir and cook for another 1 minute.
  2. Pour in the wine and let it reduce for 1 minute 30 seconds. Add the pureed tomatoes, marinara sauce, and tomato paste. Mix well, then add the sugar, salt, oregano, thyme, crushed red pepper flakes, if using, and bay leaf. Stir well, then add the browned ground beef and toss to combine.

    Cover and simmer over low heat for 1 hour, stirring occasionally. Add a little water or unsalted broth if more liquid is needed.

  3. After the time has elapsed, add the chopped parsley and Parmesan rind. Stir, then cover again and simmer for about 30 minutes. Remove the bay leaves before serving.
  4. To serve, season 900 grams of cooked spaghetti with oil, place on a large serving platter, and top with the meat sauce so guests can help themselves. For each serving, add parsley and grated cheese (1/2 cup total), and serve with a large slice of black bread, rubbed with garlic and grilled with cheese.
