Cooking the dish according to the recipe:
- Preheat the grill to medium-high heat. Combine the olive oil, mint, red pepper flakes, and salt to taste in a bowl. Rub the lamb ribs with garlic. Transfer a few tablespoons of the mint oil to a small bowl and rub the remaining oil over the lamb.
- Grill the rack of lamb until charred, 3 to 4 minutes per side. Press the center of the lamb chop with your finger; it should feel slightly firm and springy for medium-rare.
