Kids and adults alike will love this butterbeer from the wizarding world of Harry Potter. Although it's non-alcoholic, its golden color and rich head give it a very authentic feel. It's sweet, sparkling water with a creamy vanilla flavor, topped with a generous dollop of caramel-flavored whipped cream. Making it is simple: highly carbonated water is mixed with brown sugar syrup and natural flavors. Serve chilled in large beer mugs. It makes a wonderful treat for children's themed parties.

Cooking the dish according to the recipe:

  1. Combine brown sugar and 1/2 cup water in a small saucepan and heat over medium heat. Cook, stirring occasionally, until the mixture comes to a boil and the sugar dissolves, 2-3 minutes. Transfer to a small bowl or liquid measuring cup and refrigerate for about 1 hour.
  2. In a large bowl, beat the cream and sugar with a mixer on medium speed until soft peaks form. Stir in caramel sauce, add salt and beat until medium peaks form. Cover and refrigerate.

  3. Stir the butter and vanilla extracts into the cold sugar syrup. For each serving, combine 1 cup of sparkling water with 3-4 tablespoons of sugar syrup in a chilled glass. Top with caramel whipped cream.
