Po-boys are a traditional fast food sandwich from the US state of Louisiana. Their distinctive feature is the long bun, which makes them a filling sandwich. Po-boys are sometimes made with meat, but seafood is the most common filling in this coastal state. For example, shrimp fried in butter with Cajun seasoning is a perfect choice. Serve them on buns spread with flavorful mayonnaise with shallots and chopped pickles, and top with fresh lettuce and tomato. For a more intense flavor, let the mayonnaise sit in the refrigerator for a bit longer.

Ingredients for the recipe:


  • 0.5 kg large shrimp, peeled, deveined and patted dry
  • 1/3 cup mayonnaise
  • 2 tbsp chopped pickles + extra for serving
  • 2 tbsp chopped shallots
  • 0.5 tsp hot sauce
  • 2 teaspoons Cajun seasoning without salt
  • 2 tbsp (30 g) unsalted butter
  • 4 long buns, cut in half horizontally
  • Shredded iceberg lettuce and sliced ​​tomatoes, for assembly

Cooking the dish according to the recipe:


  1. Preheat oven to 350°F (175°C). Combine mayonnaise, chopped pickles, shallots, and hot sauce in a small bowl; season with salt and pepper.
  2. In a large bowl, combine the shrimp with Cajun seasoning and 1/4 teaspoon salt. Melt the butter in a large nonstick skillet over medium-high heat. Add the shrimp and cook until pink, 1.5-2 minutes per side.

  3. Meanwhile, place the buns on a baking sheet and toast in the oven for 5 minutes. Spread mayonnaise mixture on the cut side of each bun. Top with shrimp, lettuce, and tomatoes. Serve with pickles.
