The combination of sweet, ripe tomatoes with crispy bacon and juicy lettuce has become so popular and harmonious that it's simply called a BLT, after the initials of its main ingredients. This trio is served as a sandwich between two slices of toasted bread, slathered in a delicate sauce of sour cream, mayonnaise, and Old Bay seasoning, which pairs beautifully with the seafood, particularly the shrimp that complement this hearty sandwich. The shrimp are fried in bacon fat, acquiring a wealth of flavor and a subtle smoky note. For a tart touch, add a couple of slices of pickled cucumber.

- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 2 slices pickled cucumber, sliced + extra slices for serving
- 8 strips of bacon
- 8 slices of potato bread
- 4 inner leaves of bibb lettuce
- 2 large tomatoes, sliced into rounds
- Potato chips, for serving

Cooking the dish according to the recipe:
- In a medium bowl, combine shrimp with lemon juice and 1 tsp. Old Bay seasoningsIn a separate small bowl, combine sour cream, mayonnaise, finely chopped pickles, the remaining 1 teaspoon seasoning, and 1/4 teaspoon each salt and black pepper.
- In a large skillet over medium heat, cook the bacon until crisp, about 7 minutes. Transfer to a paper towel-lined plate and drain most of the rendered fat, reserving only 1 teaspoon. Return the skillet to medium heat. Add the shrimp, spreading them out in a single layer along with the cooking liquid. Cook, turning halfway through, until pink, 3-4 minutes.
- Lightly toast potato bread and spread sour cream mixture on each slice. Layer lettuce, tomatoes, shrimp, pickles, and bacon between two slices of bread. Serve with potato chips.
