Cooking the dish according to the recipe:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and return the pasta to the pot.
- Peel the tomatoes and chop them into pieces. In a food processor, combine the tomatoes, 1/4 cup olive oil, garlic, oregano, 3/4 teaspoon salt, and a few pinches of ground pepper. Process until smooth and chunky. Add the sauce to the pasta and toss to combine.
- Heat a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add the remaining 1 tablespoon of olive oil to the skillet, then add the shrimp in a single layer. Cook, turning once, until cooked through, 2 to 3 minutes. Add the shrimp to the pasta and toss thoroughly.
Divide the pasta with shrimp and tomatoes among bowls. Drizzle with olive oil.
