Combine 1/2 cup each flour, corn flour, and sugar with 1 tablespoon, 1 teaspoon baking powder, and 3/4 teaspoon salt. Stir in 1/2 cup each buttermilk, chopped pickled okra, shredded smoked cheddar, and corn kernels, 3 chopped shallots, and 1 lightly beaten egg. Deep-fry hushpuppies, dropping batter by the heaping tablespoon at a time, in vegetable oil preheated to 350°F (175°C), turning, until golden brown, 5 minutes. Transfer hushpuppies to a paper towel-lined plate to drain; season with salt. Serve with honey mustard.
