In a large skillet, heat 2 tablespoons olive oil over low heat. Add 2 bunches of mustard greens (stems trimmed) and cook until wilted. Add 3/4 cup chicken broth and simmer for 15-20 minutes. Season with salt and pepper to taste. Toss 1 chopped oxheart tomato with olive oil, salt, and black pepper. Serve the greens with tomatoes and shaved cheddar.
