Alton Brown has transformed a popular college dish into a luxurious homemade ramen with shrimp and mushrooms in foil packets. The impressive presentation and superb flavor will leave no one indifferent. Instant noodles, dried mushrooms, and large shrimp are poured into an Asian broth of soy sauce and sesame oil and baked in the oven in individual packets until the noodles and mushrooms plump up, infusing them with aromatic juices, and the shrimp become firm. Serve immediately from the oven, carefully open the packet, and savor the aromas that escape.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 packs of instant noodles
  • 0.5 cups dried mushrooms, chopped
  • 20 large raw shrimp, peeled and deveined
  • 0.5 cup finely chopped onion
  • 0.5 cup chopped green onions
  • 0.5 tsp red pepper flakes
  • 0.5 tsp coarse salt
  • 1 l. vegetable broth
  • 0.5 cup mirin
  • 1/4 cup soy sauce
  • 4 tsp. sesame oil
  • Additional device: 4 sheets of aluminum foil, 45 cm long.

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C.
  2. Divide the noodles into 4 portions and arrange them evenly in the center of each of 4 sheets of aluminum foil. Arrange the mushrooms, shrimp, onions, green onions, red pepper, and salt on top of the noodles in the following order. Fold the sides and corners of the foil up to form a small basket, leaving an opening at the top for pouring in the liquid.

  3. In a small bowl, combine the vegetable broth, mirin, soy sauce, and sesame oil. Spread the liquid evenly among the parcels. Press the foil together, leaving a small opening for steam to escape. Place on a baking sheet and bake in the oven for 15 minutes. Serve immediately.
