Nuts are a great snack for a quick hunger fix. While the meat is grilling, toss a foil packet of mixed nuts and spices on the grate to warm them up and infuse them with flavor. A mix of walnuts, pecans, cashews, and almonds works well. A sprig of fresh rosemary, garlic, and a strip of lemon zest will add just the right amount of flavor. A pinch of red pepper flakes will add a piquant flavor to the nuts. Your guests will be delighted to snack on them while they wait for the main course.

Tear off a 18-inch (45 cm) piece of heavy-duty foil. On the foil, toss 2 cups of the unsalted roasted nut mixture with 2 tablespoons of olive oil, 1 sprig of rosemary, 2 wide strips of lemon zest, 2 crushed garlic cloves, 1 teaspoon of coarse salt, and a pinch of red pepper flakes. Bring the two short sides of the foil together and fold them to seal, then fold the opposite sides toward the center. Grill over medium heat, turning occasionally, until the nuts are heated through, 8 to 10 minutes. Carefully open the package and sprinkle with flaky salt.
