Mix red and yellow lentils with turmeric, curry powder, and sun-dried tomatoes, add a bay leaf, and you'll have a hearty, warming dal flavored with butter. You can mix all the dry ingredients for the soup in a jar ahead of time so you have the mixture on hand.

Cooking the dish according to the recipe:


  1. In a large saucepan, melt 3 tablespoons butter over medium-high heat. Add 4 crushed garlic cloves and 1 diced red onion; cook for 6 minutes.
  2. Add the spice mixture: 2 bay leaves, 1 dried chili pepper, 2 tsp turmeric, 1.5 tsp curry powder and cook for about 3 minutes.

    Note

    You can store the lentil soup mix in a 750ml jar, seal the spice mixture in a plastic bag or sachet along with the lentils.

  3. Add 5 sun-dried tomatoes (not in oil), 1/2 cup red lentils, 1/2 cup yellow lentils, and 8 cups water or chicken broth; simmer until the lentils are tender, about 1 hour. Season the soup with salt to taste. The soup is ready!
