This oven-baked zucchini recipe is very simple, but thanks to the addition of high-quality extra-virgin olive oil and fresh thyme, the zucchini is incredibly flavorful and makes the perfect side dish for any holiday meal. They're equally delicious served hot or cold.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 medium zucchinis (about 1 kg), unpeeled, cut into 1 cm thick round slices.
  • 4 sprigs of fresh thyme
  • 2-3 tablespoons extra-virgin olive oil

Cooking the dish according to the recipe:


  1. Preheat oven to 220°C.
  2. Lightly toss the zucchini and thyme with 2 tablespoons olive oil (add an additional 1 tablespoon if needed), then season with salt and pepper. Arrange in a single layer on a baking sheet. Bake until the zucchini is tender and golden brown around the edges, 10 to 13 minutes. Remove from the oven and transfer to a plate. Season with salt and pepper to taste. Serve immediately.
