Cubano sandwich - detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 Cuban sandwich buns, halved lengthwise, or other large buns
  • 8 slices baked ham
  • 8 slices thinly sliced baked pork
  • 8 slices Swiss cheese
  • 1/2 cup raisins
  • 1 cup coarsely chopped pitted olives
  • 1 small shallot, coarsely chopped
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 4 tbsp mayonnaise or a little more to taste
  • 4 tbsp mustard or a little more to taste
  • 1 tbsp (15 g) butter

Cooking the dish according to the recipe:


  1. Place the raisins, olives, shallots, vinegar, and oil in a food processor. Puree until smooth. Transfer the olive mixture to a bowl, cover with plastic wrap, and let sit for at least an hour or up to two days.
  2. Open the buns like a book and spread mayonnaise and mustard on each side. Place 2 slices of ham and 2 slices of roast pork on one side of the bun. Top with 2 slices of cheese. Spread 1-2 tablespoons of olive-raisin relish on the cheese. Press the top and bottom halves of the sandwich together.

  3. Wrap 4 bricks in aluminum foil and bake in the oven at 260°C for 15 minutes.

    In a large skillet or grill pan, melt the butter over medium heat (if the skillet isn't large enough, you can cook the sandwiches in two batches). Place the sandwiches in the skillet and press them with hot bricks for 2-3 minutes, until the cheese is melted and the bread is flat and golden brown.
