- 1/2 cup fresh orange juice (from 2 oranges)
- 1/4 cup white wine vinegar
- 3 tbsp. l. brown sugar
- 2 cups chopped pineapple (1/2 medium pineapple)
- 2 cups chopped pineapple (1/2 medium pineapple)
- 1 jalapeño pepper, finely chopped (remove veins and seeds for a less spicy flavor)
- Coarse salt and freshly ground pepper

Cooking the dish according to the recipe:
- Combine orange juice, vinegar, brown sugar, and 2 tablespoons water in a medium saucepan and cook over medium-high heat until the sugar dissolves, about 2 minutes. Add the pineapple, red onion, and jalapeño.
- Bring to a boil, then reduce heat and simmer, stirring occasionally, until the mixture thickens, 15 to 30 minutes. Season with salt and pepper. Cool.
- Place the ham in the buns. Top with the sweet and sour pineapple.
