Grilled chicken using this recipe not only acquires a unique, original flavor and amazing aroma, but also a stunning appearance – the result is a truly crispy, honey-like, beautiful, and delicious crust!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Marinade

  • One chicken, cut into 10 pieces and patted dry with paper towels, weighing 1.8 kg.
  • 1/2 cup squeezed orange juice
  • 1/4 cup olive oil
  • 1/4 cup hot sauce
  • 1/4 cup Dijon mustard
  • 1 tbsp. l. grated orange zest

Glaze

  • 55 g butter
  • 1/4 cup honey
  • 1/4 cup squeezed orange juice
  • 1/4 cup barbecue sauce
  • 1 tbsp. l. grated orange zest
  • 2 tablespoons Dijon mustard
  • 1/4 tsp ground allspice

Cooking the dish according to the recipe:


  1. Mix orange juice, olive oil, hot sauce, mustard, and orange zest in a large bowl. Add the chicken and stir.

    Cover with cling film and marinate in the refrigerator for at least 1 hour or overnight.
  2. Preheat the grill to medium heat. Remove the chicken and let it come to room temperature.

  3. Remove the chicken from the marinade and pat dry. Grill for 5 minutes on each side, then reduce the heat and close the grill lid. Continue cooking the chicken for 25 minutes, or until cooked through.
  4. Prepare the glazeWhile the meat is grilling, melt the butter in a small saucepan over a grill. Add the honey, orange juice, barbecue sauce, zest, mustard, and allspice and whisk to combine. Pour some of the glaze into a small bowl to serve with the meat.
  5. Brush the chicken pieces with glaze, then turn them over, glaze-side down, and cook for 2 minutes. Brush the top of the chicken with glaze and turn again. Continue cooking for another 3 minutes. Transfer the chicken from the grill to a platter and serve with the glaze in a bowl.
