Before grilling, chicken pieces are coated with a barbecue sauce made with balsamic vinegar and ketchup, brown sugar, and spices. Make it ahead of time and keep it warm, as you'll be brushing it over the meat during grilling and then serving it for dipping. It may seem like a lot of vinegar at first, but don't be alarmed: as the sauce reduces and thickens, it develops a wonderfully complex and rich flavor, and the sauce forms a delicious sheen on the chicken. You can also grill chicken in a grill pan or bake it in the oven.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Balsamic barbecue sauce

  • 1 cup balsamic vinegar
  • 3/4 cup ketchup
  • 1/3 cup brown sugar
  • 1 clove garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 0.5 tsp salt
  • 0.5 tsp ground black pepper

Chicken

  • 4 pieces of chicken (a mixture of breasts, thighs, and drumsticks)

Cooking the dish according to the recipe:


  1. Barbecue sauce:


    Place all ingredients in a small saucepan and stir until smooth. Cook over medium heat until the sauce has reduced by a third, about 15-20 minutes.
  2. Chicken:


    Place a grill pan over medium heat or preheat a gas or charcoal grill. Season the chicken with salt and black pepper. Lightly brush the chicken with barbecue sauce using a pastry brush. Place the chicken on the grill. Place the remaining barbecue sauce, still in the same pan, over low heat or on the edge of a gas or charcoal grill and let it simmer while the chicken cooks.

  3. Grill the chicken for about 8 minutes per side. Brush the meat with barbecue sauce every few minutes. Remove the chicken from the grill and let rest for at least 5 minutes. Serve with warm barbecue sauce.
  4. Alternatively, you can bake the chicken in the oven. Preheat the oven to 190°C (375°F). Place the chicken, skin-side up, in a baking dish and bake for 25 minutes. Remove the dish from the oven and pour barbecue sauce over the entire surface of the chicken. Return it to the oven and bake for another 15 minutes.
