Acai berries are the fruit of a palm tree native to Central and South America and an important food source for indigenous peoples. They are rich in vitamins, antioxidants, and essential fatty acids. Acai berry puree pairs perfectly with bananas in a refreshing, delicious sorbet that's low in calories, carbs, and fat. Since bananas are naturally very sweet, you won't need to add refined sugar to this dessert. Just a spoonful of maple syrup adds depth of flavor. This sorbet doesn't require freezing in an ice cream maker or the freezer, as it's blended from frozen fruit.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 ripe medium bananas, peeled
  • 2 packets of frozen sugar-free acai puree (100g each)
  • 1 tbsp. unrefined coconut oil
  • 1 tbsp maple syrup

Cooking the dish according to the recipe:


  1. Cut each banana into 6 pieces and freeze until firm, preferably overnight.
  2. Without removing the acai puree from the bag, crush it into smaller pieces. Puree the frozen pieces in a food processor until smooth. Add the frozen banana chunks, coconut oil, and maple syrup and begin blending (the food processor may shake at first). As the bananas blend with the acai, the mixture will become crumbly, then sticky, and eventually smooth and slightly snowy, like sorbet. Stop the food processor periodically to scrape down the sides of the bowl and break up any clumps. Serve the sorbet immediately, or transfer it to a container and freeze until ready to serve.
