  1. Preheat a 3.5-liter air fryer to 200°C. Place the rack inside the bowl.
  2. Pat the pickles dry and place them on a baking sheet lined with paper towels. Pat them dry with paper towels, pressing gently to remove as much moisture as possible. Discard any slices with large holes or very thin ones—they're not needed.

  3. Prepare the breading area by placing three medium bowls side by side. In one bowl, combine the flour, cayenne pepper, and 1/2 teaspoon of Cajun seasoning. In the second bowl, combine the buttermilk and hot sauce. In the last bowl, combine panko breadcrumbs, Italian seasoning, remaining 1 tsp. Cajun seasoning and 0.5 tsp salt. Sprinkle the breadcrumbs with oil and mix with your hands until completely coated.
  4. Working in small batches, fry the cucumbers in the air fryer. First, coat a handful of cucumbers in the flour mixture, shaking off any excess. Then, dip them in the sour milk mixture to coat completely, shaking off any excess. Finally, roll the cucumbers in the breadcrumbs, pressing gently to ensure they adhere. Place the breaded cucumbers on the prepared baking sheet and repeat until all the cucumbers are coated.
  5. Place one-third of the cucumbers in a single layer in the air fryer basket. Fry for 8 minutes. The cucumbers will be very crispy and golden on both sides. Transfer to a serving plate and repeat with the remaining two batches.
  6. Dip sauceMeanwhile, combine mayonnaise, ketchup, horseradish, and Cajun seasoning in a small bowl.

Serve warm cucumbers with dipping sauce or use them and the sauce on a burger.
