Cajun Rotelle Pasta with Cheese - A Detailed Recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 350 g of Rotelle pasta
  • 2 tbsp. l. olive oil
  • 180 gr. andouille sausages, cut into cubes
  • 2 bunches of green onions, cut into rings
  • 1 sweet pepper, diced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons of wheat flour
  • 2 cups of milk
  • 230 g of mature cheese Cheddar, cut into small cubes
  • Coarse salt

Cooking the dish according to the recipe:


  1. Bring a saucepan of salted water to a boil. Add the Rotelle pasta and cook for 1 minute less than the package directions. Set aside 1 cup of the stock for the sauce, and discard the remaining liquid.
  2. Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, for about 2 minutes. Add the green onions and bell peppers and continue to cook until the vegetables are slightly softened, about 3 more minutes. Cajun seasoning, flour and cook, stirring, for another 2 minutes. Gradually pour in the milk and cook, stirring, until the sauce thickens and becomes smooth, about 5 more minutes.

  3. Add the macaroni, cheese, and remaining broth to the skillet. Reduce the heat and simmer, stirring occasionally, until the cheese melts, about 1 minute.
