This refreshing and vibrant fruit and vegetable salad is the perfect addition to your summer menu. Thinly sliced ​​nectarines are mixed with tomato chunks, red onion, arugula, and ricotta, all drizzled with a honey-vinegar dressing. Each salad component brings out its own unique flavor, and you'll experience a harmonious blend of the juicy sweetness of the nectarines and tomatoes with the piquant arugula and onion, the tartness of the dressing, and the salty bits of cheese. To soften the onion's flavor and allow it to blend seamlessly with the rest of the salad, soak it in cold water for a few minutes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 0.8 kg of non-hybrid tomatoes, thinly sliced
  • 4 nectarines, pitted and thinly sliced
  • 5 cups arugula
  • Half a large red onion, thinly sliced
  • 1/3 cup white balsamic or wine vinegar
  • 1 teaspoon of honey
  • 3 tbsp extra-virgin olive oil + extra for drizzling
  • 90 gr. ricotta cheese, crumbled

Cooking the dish according to the recipe:


  1. Soak the red onion in a bowl of cold, salted water for 10-15 minutes; drain, rinse, and pat dry. Meanwhile, bring the vinegar and honey to a boil in a small skillet over medium heat; cook until the consistency of a light syrup, about 5 minutes. Let cool completely. The syrup will thicken as it cools. Pour into a bowl and gradually whisk in the olive oil.
  2. Season the tomatoes with salt and black pepper and arrange them on a platter with the nectarines, arugula, and onions. Sprinkle with ricotta. Drizzle with the vinegar and olive oil mixture; toss gently.
