Crispy Italian crostini sandwiches are the perfect appetizer for house parties. They're a favorite, combining vibrant flavors, contrasting textures, and a striking presentation. Make crostini with minty green pea puree and shredded prosciutto. You can make the pea puree ahead of time and store it in the refrigerator. Just before serving, mix it with whipped cream for a fluffy texture, arrange it on toasted, garlic-rubbed baguette slices, and garnish with slices of prosciutto.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Green pea puree

  • 2 cups chicken broth or water
  • 1 teaspoon red pepper flakes
  • 1 package (450 g) of frozen peas
  • 1/4 cup chopped mint
  • 3/4 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 cup whipping cream
  • 90 g prosciutto ham, cut into small cubes

Crostini

  • 1 baguette, cut into 1cm thick slices.
  • Olive oil to drizzle
  • 3-4 cloves of garlic

Cooking the dish according to the recipe:


  1. Green peas: In a medium saucepan, heat the chicken broth and red pepper flakes over medium-high heat until the broth comes to a boil. Add the frozen peas and cook until tender, about 5 minutes. Drain the peas in a colander.
  2. Place the peas in a food processor along with the mint, salt, and pepper. Puree the pea mixture until smooth. Transfer the pea mixture to a medium bowl and refrigerate for about 30 minutes.

  3. Meanwhile, prepare the crostini: Preheat the oven to 190°C (375°F). Place the baguette slices in a single layer on a parchment-lined baking sheet. Bake in the oven until golden brown around the edges, about 10 minutes. While the crostini are still warm, drizzle them with olive oil. Then, take a garlic clove and rub it a few times on the surface of each slice of bread to impart a light garlic flavor.
  4. For assembly Whip the cream until stiff peaks form. Fold the whipped cream into the pea puree. Top each crostini with about 1 tablespoon of the pea puree. Garnish with pieces of prosciutto. Serve immediately.
