This tender green pea dip with sun-dried tomatoes and garlic is the perfect low-calorie appetizer, rich in fiber and protein, perfect for summer. Giada De Laurentiis suggests serving it with crisp endive leaves for dipping. Firstly, it's healthier than crackers, and secondly, the slight bitterness of endive makes a wonderful complement to the sweet and spicy dip.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.

Ingredients for the recipe:

  • 220 g sun-dried tomatoes, drained (about 3/4 cup)
  • 2 cloves garlic, chopped
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon coarse salt
  • 1 teaspoon freshly ground black pepper
  • 4 heads endive, separated into leaves
