Make a light spring guacamole by mixing avocado with green peas, fresh cilantro, green onions, and jalapeño. Serve as an appetizer with sliced cucumbers for dipping. This appetizer is perfect for a light snack before a holiday dinner.

Ingredients for the recipe:
- 280 g frozen green peas
- 2 large ripe Hass avocados, halved, pitted and peeled
- Zest and juice of 1 lime + more to taste
- 0.5 cups tightly packed cilantro, plus extra for serving
- 1 green onion (green part only), chopped
- 1 small jalapeño, seeded and finely chopped
- 2 seedless cucumbers, peeled and thinly sliced, for serving

Cooking the dish according to the recipe:
- Bring a large saucepan of salted water to a boil. Add the green peas and cook for 1 minute.
- Drain the peas and immediately rinse them with cold water. Drain thoroughly, then transfer to a food processor. Blend until almost smooth. Add the avocado, lime zest and juice, and cilantro. Blend until almost smooth.
- Add the green onions and jalapeño and blend until smooth. Season with salt and pepper to taste. Transfer to a serving bowl and garnish with cilantro. Serve the guacamole with cucumber slices.
