Traditional Italian pesto sauce made with authentic ingredients isn't cheap, even if you decide to make it yourself. This pesto recipe is perfect for everyday use. It's made with less expensive ingredients, but the flavor is just as amazing. Instead of basil, use frozen green peas, substitute expensive pine nuts with walnuts, and instead of the Italian pecorino cheese, which is so hard to find in supermarkets, use a domestic version of Parmesan. Blend all ingredients in a blender until they form a paste. Green pea pesto can be served as an appetizer, spread on toasted baguette slices (crostini).

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 1 cup frozen green peas, thawed
  • 1/4 cup toasted walnuts
  • 1 clove of garlic
  • 1/4 cup grated domestic Parmesan
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • To serve: crostini

  2. With the processor running, slowly pour in the olive oil until a thick paste forms. Turn off the food processor. Season the pea paste with salt and pepper to taste. Whisk the pesto one last time to incorporate the salt.

  3. Spread on crostini and serve as an appetizer.
