A gluten-free or low-carb diet isn't a reason to give up delicious pizza. This chickpea-flour pizza is even quicker to make than traditional pizza, and it's just as delicious, but healthier and richer in protein. The dough, made with chickpea flour and water, is fried in a pan, and then the finished crust is topped with olive oil, tomato sauce, chicken sausage, and plenty of grated provolone cheese. Once melted in the oven, it will transform even a fake pizza into a true delicacy!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Tomato sauce

  • 2 tsp olive oil
  • 2 cloves garlic, chopped
  • 1 carrot, chopped
  • Half a small onion, chopped
  • 1 can (220 g) of tomato sauce or 220 g of pureed tomatoes

Cake

  • 2/3 cup chickpea flour
  • 2 tsp garlic powder
  • 0.5 tsp salt
  • 2 tsp olive oil

Topping

  • 0.5 tsp olive oil
  • 1 cup grated provolone cheese
  • 100 g chicken sausages (about 1 piece), cut into 0.5 cm thick slices.

Cooking the dish according to the recipe:


  1. Preheat oven to 220°C.
  2. Tomato sauce:
    Heat olive oil in a large saucepan over medium heat. Add garlic, carrots, and onion and cook until softened, about 5 minutes. Season with salt and pepper. Add the tomato sauce and bring to a simmer. Cover and simmer over low heat until thickened, about 20 minutes.

  3. Cake:
    Meanwhile, in a bowl, combine the chickpea flour, garlic powder, salt, and 2/3 cup water. Heat the olive oil in a 7-inch (19 cm) round nonstick skillet over medium heat and pour the "batter" into the pan (it should be about 0.3 cm thick). Cook the crust until the edges begin to brown, about 3 minutes. Flip it over, like a pancake, and cook the other side for another 3 minutes. Transfer the crust to a baking sheet.
  4. Place the tomato sauce in a food processor and process until smooth.
  5. Pizza topping:
    Brush the crust with olive oil. Spread a thin layer of tomato sauce on top, leaving a 1 cm border. Sprinkle with grated provolone cheese. Top with slices of chicken sausage.
  6. Bake until cheese is melted and bubbly, 10 to 15 minutes.
