Even though this pizza is made without crust, you'll find a winning combination of broccoli and cheese that's always a hit. The broccoli in this recipe serves double duty: it's both the crust and the topping. Your pizza will be healthy (goodbye, excess carbs!) and delicious (hello, gooey cheese!). This pizza is topped with slices of pepperoni, but you can make it vegetarian or add other toppings if you prefer: olives, bell peppers, or sun-dried tomatoes all work well here.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 packages of 300 g frozen broccoli
  • 0.5 cups grated Parmesan (about 50 g) + extra for sprinkling
  • 0.5 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes
  • 2 large eggs, lightly beaten
  • 1 package (220 g) of grated semi-skimmed mozzarella
  • 0.5 cup store-bought pizza sauce (110 g)
  • 1 cup pepperoni slices (about 60 g)

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C.

    Prepare frozen broccoli according to package directions. Place in a colander, drain, and cool for 10 minutes. Set aside 1 cup of florets for the topping, finely chopping them if needed; set aside.
  2. Puree the remaining broccoli in a food processor, scraping down the sides of the bowl as needed. Place the broccoli, Parmesan, oregano, red pepper flakes, eggs, 3/4 cup mozzarella, and 3/4 teaspoon salt in a large bowl and mix well.

  3. Transfer to the prepared baking sheet and spread into an even layer. Bake until golden brown, about 20 minutes.
  4. Spread the pizza sauce over the crust, leaving a 2-cm border. Top with the remaining mozzarella, followed by the pepperoni and remaining broccoli florets. Bake until the mozzarella is melted and the pepperoni slices are golden brown, about 15 minutes. Sprinkle with additional Parmesan cheese and serve.
