Make a juicy and healthy side dish of broccoli and green beans that pairs perfectly with almost any meat, poultry, or fish dish. Blanch the vegetables in water for a few minutes until bright green (be careful not to overcook them, as they'll remain juicy and crisp), then pan-fry them in garlicky olive oil with a pinch of red pepper flakes, which adds a subtle tang without overpowering their natural flavor. You can blanch the vegetables ahead of time and sauté them just before serving to ensure they're still hot.

- 2 cloves garlic, thinly sliced

Cooking the dish according to the recipe:
- Bring 6 quarts of salted water to a boil in a large saucepan. Prepare a large bowl of ice water. Add the broccoli to the saucepan and cook for 2 minutes. Blanching is essential at this stage, as you'll be roasting it later. Using a slotted spoon, remove the broccoli from the saucepan and transfer it to the bowl of ice water. Once the broccoli has cooled completely, drain it in a colander. Refresh the bowl with ice water.
- Bring the water back to a boil. Add the green beans and cook for 4 minutes. Like broccoli, they simply need to be blanched. Using a slotted spoon, transfer the beans from the pan to the ice water. Once the beans have cooled completely, drain them in a colander.
- Heat olive oil in a large skillet. When it begins to smoke, add the garlic and sauté for about 45 seconds. Remove immediately when the garlic begins to brown. If you overcook it, the oil will become bitter. Add red pepper flakes, broccoli, and green beans to the skillet and sauté for 5 minutes. Season with salt and pepper to taste. Serve immediately.
