This dish is versatile, juicy, and delicious. How could it be otherwise? After all, it's made with sausage! You'll need all-natural Italian turkey sausage. It's fried whole until cooked through, then sliced ​​into strips and mixed with a separately prepared tomato sauce infused with sweet peppers and onions. Dried oregano, basil, and red wine impart a wonderful flavor and aroma typical of Mediterranean cuisine. Serve the sausages in vegetable sauce as a main course, with a side dish, or use them in hearty sandwiches.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/4 cup extra-virgin olive oil
  • 450 g sweet Italian turkey sausage
  • 2 red bell peppers, thinly sliced
  • 2 onions, thinly sliced
  • 1 teaspoon coarse salt
  • 1 teaspoon ground black pepper
  • 0.5 tsp dried oregano
  • 0.5 cup chopped fresh basil leaves
  • 4 cloves garlic, chopped
  • 2 tbsp tomato paste
  • 1 cup fortified Marsala wine
  • 1 can (425 g) canned diced tomatoes
  • 1/4 teaspoon red pepper flakes, optional
  • 4 - 6 fresh Italian sandwich rolls, optional

Cooking the dish according to the recipe:


  1. Heat olive oil in a large, heavy-bottomed skillet over medium heat. Add the sausages and cook until browned on both sides, about 7-10 minutes. Remove from the skillet to paper towels to drain excess oil.
  2. In a skillet over medium heat, sauté the bell pepper, onion, salt, and black pepper until golden brown, about 5 minutes. Add the oregano, basil, and garlic and sauté for another 2 minutes.

  3. Add the tomato paste and stir. Add the wine, tomatoes, and chili flakes, if using. Stir to evenly distribute the ingredients, scraping the bottom of the pan with a wooden spoon. Bring to a boil.
  4. Cut each sausage into 4-6 pieces, approximately 2 cm thick. Add the sausages back to the pan and stir to distribute evenly. Cook until the sauce thickens, about 20 minutes.
  5. Serve in bowls. Or make sandwiches. Cut the buns in half horizontally. Remove the crumb from the bottom half, being careful not to damage the crust. Fill the bottom half with the sausage mixture. Top with the top bun half and serve immediately.
