With this simple step-by-step recipe, you can cook New York steak just like in a restaurant. The meat turns out delicious, juicy, and flavorful. Before frying, bring the steak to room temperature. Sear it in olive oil until golden brown on both sides. Then baste the meat with melted butter and finish cooking in the oven with sprigs of thyme. Use a meat thermometer to avoid overcooking this expensive cut and ruining it. To serve, slice the steak against the grain and baste it with the pan juices.

- 2 tbsp extra-virgin olive oil + extra for drizzling
- 2 tablespoons unsalted butter, room temperature
- 1 small bunch of fresh thyme sprigs
- Sea salt, to sprinkle

Cooking the dish according to the recipe:
- Preheat oven to 135°C.
- Bring the steaks to room temperature for 30-45 minutes. Sprinkle the steaks with a small amount of coarse salt. Heat a large oven-safe skillet over medium heat until hot, about 2 minutes. Add olive oil to the skillet. Carefully place the steaks in the skillet and cook, without moving them, until golden brown, about 4 minutes.
- Turn the steaks over and remove the pan from the heat. Add the butter and thyme sprigs. Drizzle the melted butter over the steaks and continue basting and brushing for about 45 seconds. Move the pan to the center of the oven and bake the steaks until an instant-read thermometer inserted into the thickest part of the meat registers 135°F (57°C), 5-7 minutes for medium-rare.
- Carefully remove the hot skillet from the oven, transfer the steaks to a cutting board, and let them rest for 10-15 minutes. Slice the steaks and arrange them on a serving platter. Drizzle with the remaining sauce, sprinkle with sea salt, and drizzle with olive oil.
