Preparation:

    Step 1
  • Position a rack in the upper third of the oven and preheat the oven to broil. Lightly grease the left third of a 45 x 33 cm baking pan with butter.
  • Step 2
  • In a medium bowl, combine the Parmesan, heavy cream, thyme, garlic, 1 teaspoon salt, and a few grinds of black pepper. Add the potatoes and toss to coat.
  • Step 3
  • Place the potatoes in even, overlapping layers on a greased baking sheet. Pour the remaining cream mixture from the bowl over them. Sprinkle evenly with Gruyere.
  • Step 4
  • Brush the steak with oil on both sides and season generously with salt and pepper. Place the steak in the middle third of the baking sheet. Grill for 5 minutes until the potatoes and steak begin to brown. Meanwhile, place the shrimp in a 1.5-quart oval baking dish.
  • Step 5
  • Remove the baking sheet from the oven, preheat the oven to 425°F (220°C), and place the shrimp dish on the right third of the baking sheet next to the steak. Return the baking sheet to the oven and bake, stirring once, until the shrimp are cooked through and the steak reaches 130°F (57°C), 16-18 minutes.
  • Step 6
  • Transfer the steak to a cutting board and let it rest for 10 minutes. Then slice and serve with potatoes, shrimp, spinach salad, and bread for sopping up the juices.
