This simple dish gets its unique flavor from the fragrant garlic oil. Flavor the olive oil by lightly frying the garlic in it, being careful not to let it brown, which will make the oil bitter, then add the remaining ingredients. The pasta can be made from leftover pasta from last night's dinner (or you can cook fresh), tossing it in a pan with small broccoli florets and a little wine vinegar. Serve sprinkled with grated Parmesan cheese. It's juicy and delicious.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 cups penne pasta, cooked until al dente
  • 1/3 cup extra-virgin olive oil
  • 2 cloves garlic, crushed
  • 1/4 tsp red pepper flakes
  • 1/4 head of broccoli, cut into thin florets, stem peeled and cut into strips
  • 2 tablespoons red wine vinegar
  • A few spoons of water or pasta water, as needed
  • Parmesan, for serving

Cooking the dish according to the recipe:


  1. In a large skillet over medium heat, heat the olive oil, garlic, and pepper until fragrant. Once the garlic is golden, remove it from the pan. You'll be left with a fragrant garlic oil. Add the broccoli to the skillet. Make sure the broccoli is completely dry before adding it to the oil..
  2. Toss the broccoli to coat with oil. Season with salt and pepper to taste and cook over medium heat until the broccoli is slightly softened, about 5 minutes. Increase the heat to high and deglaze the pan with red wine vinegar. Add a few tablespoons of the pasta water if needed.

  3. Add the pasta and toss to coat with oil. Sprinkle with Parmesan and serve.
