This simple Italian pasta dish features farfalle (bow-shaped pasta) and broccoli florets, but what makes it special is the dressing of anchovies, garlic, and peppers, sautéed in a mixture of high-quality olive oil and butter. The anchovies enhance the flavor of the entire dish, without you even tasting the fish. Sprinkle the pasta with grated Parmesan cheese before serving. Enjoy as a standalone vegetarian dish or as a side dish.


Ingredients:

  • 450 g farfalle pasta (bow ties)
  • 2 heads broccoli, separated into florets (about 4 cups)
  • 1/4 cup olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, chopped
  • 5 anchovy fillets, diced
  • 1/4 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 tbsp. grated parmesan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large saucepan of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally. After 5 minutes, add the broccoli florets, stir, and cook for another 4 minutes. Drain the pasta and broccoli, reserving 1 cup of the cooking water.
  • Step 2
  • Meanwhile, heat the olive oil and butter in a large skillet over medium heat. Add the garlic, anchovies, and red pepper and cook for 5 minutes. Add the broccoli, pasta, salt, and pepper and stir. Add a little of the reserved pasta water if the pan is too dry. Transfer to a serving platter, sprinkle with Parmesan, and serve with salmon.
