This is a healthier version of the English dish fish and chips. Instead of regular potatoes, the recipe uses sweet potatoes, cut into strips, and instead of deep-frying, they are baked in the oven, resulting in a crispy and delicious dish just like French fries. The fish is also fried in a small amount of vegetable oil. Coat the cod strips with a spiced beer batter and pan-fry until golden brown. Drizzle with lemon juice and serve. Leftover homemade beer batter seasoning can be used in other dishes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Oven-baked French fries

  • 4 medium sweet potatoes, with skins on, cut into French fries
  • 2 tsp rapeseed oil
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/4 tsp black pepper
  • Zest of 1 orange

Beer batter

  • 0.33 l of beer
  • 1 and 1/4 cups premium flour
  • 0.5 tsp. homemade seasoning, see recipe below

Cod

  • 0.7 kg. skinless and boneless cod fillet, cut diagonally into strips 10 cm long and 2.5 cm wide.
  • 2 tbsp. l. rapeseed oil
  • 0.5 tsp salt to sprinkle after frying (optional)
  • 1 lemon, cut into wedges

Homemade seasoning

  • 1 tbsp. salt
  • 1/4 cup garlic powder
  • 1/4 cup black pepper

Cooking the dish according to the recipe:


  1. French fries:

    Preheat oven to 200°C (400°F). Place the sweet potatoes in a medium bowl. Combine canola oil, paprika, salt, black pepper, and orange zest and toss to coat evenly. Spread the sweet potatoes in a single layer on a parchment-lined baking sheet and bake until tender and just beginning to brown, 40 to 45 minutes.
  2. Increase the oven temperature to 450°F (230°C) and continue baking until the sweet potato is crispy around the edges, another 5 minutes. Reduce the oven temperature to 205°F (95°C) and keep the sweet potato warm while you fry the fish.

  3. Beer batter:

    Pour the beer into a large bowl. Sift in the flour, whisking gently until smooth. Pat the fish dry, sprinkle both sides with homemade seasoning, and dip in the beer batter.

    Homemade seasoning:

    Combine salt, garlic powder, and black pepper in a bowl, distributing the ingredients evenly.

    Cod:

    In a large nonstick skillet, heat the oil until very, very hot. Use tongs to remove the fish from the batter and let any excess drip back into the bowl. Add the fish to the hot oil and fry, a few at a time, until golden brown, turning once, about 2 minutes per side.
  4. Transfer the fish to a paper towel-lined baking sheet and keep warm in the oven. While the fish is still hot, sprinkle it with salt if desired. Sprinkle with freshly squeezed lemon juice.
