This vegetable-rich casserole will become your signature dish after just one serving. It's perfect for summer, with so many ripe, seasonal vegetables: potatoes, yams, bell peppers, carrots, onions, tomatoes, and zucchini. All the vegetables pair perfectly, and the highlight is the crispy topping of breadcrumbs, Italian spices, and Parmesan cheese. Sprinkle it over the vegetables in the dish and bake. This vegetable casserole is a great side dish for any meat dish.
