This flavorful white bean dip is quick to prepare, looks impressive, and is perfect for a holiday treat or house party. Keep a couple of cans of white beans in the pantry for unexpected guests, so you can whip up a crowd-pleasing appetizer in minutes. Blend some of the beans with olive oil, spices, and garlic until smooth, then toss the remaining beans with canned roasted peppers and herbs and spoon them over the dip. Serve with crackers, pita bread, or vegetables for dipping.


Ingredients:

  • Two cans (425g each) of cannellini beans
  • 0.5 cups olive oil
  • 1 tbsp chopped parsley
  • 1 tbsp basil
  • 1 baked sweet pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Rinse two 14-ounce (425-gram) cans of cannellini beans; set aside 1/2 cup of beans for serving. In a food processor, puree the remaining beans with one minced garlic clove, the juice of 1 lemon, and salt and black pepper to taste. Gradually whisk in 1/2 cup of olive oil, then transfer the sauce to a bowl. Toss the remaining beans with one diced roasted bell pepper, 3 tablespoons of olive oil, 1 tablespoon each of chopped parsley and basil, and salt and black pepper to taste. Spoon the topping over the sauce and serve with pita chips for dipping.
