This dip uses low-fat cottage cheese (about 2%) instead of cream cheese. Blend it with canned white beans in a food processor, and the appetizer will acquire a delicate, velvety texture. Dried thyme, a splash of apple cider vinegar, extra virgin olive oil, and a pinch of paprika add a vibrant flavor. For a more interesting combination, use smoked paprika instead of regular sweet paprika. Dip pita bread slices, crackers, or raw vegetables into the appetizer. Quick, delicious, and very healthy.
